What I Wish I'd Known Before Buying a Floral Cooler
We recorded this one live in the barn, which means you are going to hear gators driving past. I tried to time it. I failed. But this felt like a conversation that should happen in the actual working space rather than somewhere pretty and protected.
I want to start with the story I tell every new grower who asks me about storage.
The Iris
Years ago, when I was just starting, I was growing more than I ever had. It was my first time growing in a hoop house and flowers were coming in beautifully. I knew enough to know I needed to keep them cool. I wanted to stagger my sales, get the best shelf life, actually be professional about it.
We happened to have a second refrigerator in the garage. So I cleaned it out completely, made sure my buckets would fit, and went out and harvested.
I had been talking to a florist. I told her I had these incredible iris. She placed orders.
I came back a couple of hours later. Not overnight. A couple of hours.
Every single stem had frozen.
I cried. I genuinely cried, standing in the garage. Not because of the money, though that hurt, but because I felt like an idiot. I had finally gotten to the point where I had product and someone had said yes, and I had to turn around and tell her I could not deliver. I had ruined them by accident, because I was not prepared.
So that was the day I decided I needed a real cooler.
Why a Home Refrigerator Does Not Work
Here is what I did not understand at the time.
A household refrigerator is not designed to hold a consistent, gentle temperature across a large open space. It cycles, and it has cold spots, particularly near the vents and at the back. Cut flowers want to be cold but not freezing, and the margin between the two is much narrower than most people assume. A fridge that keeps your milk perfectly safe will freeze a bucket of iris sitting in the wrong spot.
Volume makes it worse. A few stems in a vase might be fine. Buckets packed in tight change the airflow entirely, so some stems sit directly in the cold blast while others barely cool at all.
If you are just starting and a spare fridge is what you have, use it, but keep the flowers away from the back and the vents, do not pack it, and check on them far sooner than you think you need to. Treat it as a stopgap, not a system.
Then I Saw the Prices
I decided I was a flower farmer now. A big girl with a real business who needed big girl things.
Then I sat down and looked at what a commercial walk-in actually costs.
So I started researching DIY instead, and that was its own kind of overwhelming. Get a shed. Spray foam it. Add this, add that, green board, seal everything. There are a lot of YouTube videos and most of them made me feel worse rather than better.
I also watched a flower farmer further down the shore lose her entire homemade system. She had built it herself, not through any company, and when it went down it went down completely. Walking into that was a little scary, honestly. It made me nervous about building my own.
That is roughly where I was when I found CoolBot, which is why I asked Julia to come talk to me.
What a CoolBot Actually Is
Julia is the senior sales and marketing manager at Store It Cold and has been with the company close to ten years. I asked her to explain the product, because I describe it badly.
It is not, despite the name, an AI robot that keeps things cold.

He and a college roommate started tinkering with an air conditioner, and the CoolBot came out of it.
It was built for farmers, but Julia said it became clear quickly that a lot of people need affordable refrigeration. Florists. Hunters. Brewers. Cheese and wine people.
I can confirm the hunters. Guys come in to pick up flowers for their girlfriends, spot the cooler, and ask what it is. Then they ask whether you could put a deer in there. Yes. Could you put beer in there? Also yes.
DIY or Turnkey
There are two routes, and the honest answer about which one is right depends mostly on your time and your tolerance for hardware stores.
Build your own. Store It Cold publishes step-by-step guidance and video for this, and you buy just the controller. Julia was candid that when they surveyed existing customers, a lot of people said some version of "I love my cooler and I never want to build another one." She pointed out that in their own build videos, it is her and a former operations manager making a great many trips to the hardware store.
She described it as a weekend or two of work. I laughed at her. I think she is being generous.
Turnkey. This is what we have. It comes as a kit: insulated walk-in panels, the correctly sized AC for the space, and the Wi-Fi enabled CoolBot Pro.
What sold me was not the specs. It was the conversation.
I called them and essentially said, explain this to me, because it seems too good to be true. And instead of a sales pitch I got a real conversation about whether I wanted the cooler inside or outside, which components needed to be where, and how I would access it.

I had not thought about it that way at all. With the turnkey system, when I outgrow this, I add panels. That is much harder to do with something homemade. It also comes apart
This is worth knowing if you rent.
The panels join with a cam lock system, which means they also come apart with a cam lock system. Julia described working with a florist who took a downtown retail space as part of a revitalization program, at a good rate, knowing it was temporary. The turnkey cooler worked because they were not remodeling anything or taking down walls. When the time came, the cooler went with them.
The Part I Use Every Single Day
Ours came with the Wi-Fi enabled CoolBot Pro, and I did not expect to care about that feature as much as I do.
We are not a shiny little florist shop. We are a farm. Flowers get harvested, brought in, and turned into whatever they need to be. Things are busy and doors get left open.
The remote monitoring means I get an alert on my phone if the cooler goes offline, or if the temperature moves outside the range I have set. If someone left the door open a crack during a wedding load-out, I know. If there is a thunderstorm and we lose power, I know. I can text my dad and ask him to go shut the shop door, which he loves being asked to do.
You can pull it up on a phone, tablet or computer, and it shows real-time temperature. You set your own upper and lower limits, and it sends text and email alerts when you cross them or when it sees the unit go offline, which usually means a power cut.
But the part I actually nerd out about is the history.
You can see the peaks. Every door open and close. There is always one enormous spike that I know is us coming in from harvest, because field-temperature flowers plus a door propped open does exactly what you would expect.
I watch those trends across the season, because different crops behave differently. A heavy peony harvest holds its temperature longer than other things, so I want to see whether it is dropping the way it should. People might think tracking that is excessive. I want to know.
The Ethylene Thing
We also have a traditional glass-front florist cooler, which is genuinely a soda cooler. Fully sealed, proper gaskets, all of it. That is where bouquets live.
And that is where I see far more ethylene problems than in the CoolBot space.
My theory, and it is my theory rather than anything the company told me, is that it comes down to how tightly sealed that case is. Ethylene gas builds up and has nowhere to go, and cut flowers are extremely sensitive to it. It makes them age fast, drop petals, and fail early.
Which is why I am forever chasing my crew out of the flower cooler with their lunches. Do you have an apple in there? Get it out of my cooler. Fruit is one of the biggest ethylene producers there is, and an apple sitting next to your bouquets is actively shortening their life. We have a staff refrigerator for exactly this reason.
If you take nothing else from this post, take that. Keep produce out of your flower storage.
What Is Actually in the Panels
I asked Julia what the insulation is, because I had never opened one up.
The panels have a metal exterior skin over a rigid frame, and the panel itself is injected with foam that then cures.
For anyone going the DIY route, their guidance is to insulate to about R25. The turnkey panels come in around R28. A little over-insulation does not hurt.
They manufacture in Los Angeles and in Miami, and ship from whichever is closer to you.
One thing I did not expect: the panels are light. They look bulky and cumbersome and they are not. I am not a particularly strong person and I could maneuver them. I absolutely had help, and Julia recommends two or three people, mostly because the panels are wide and the ceiling is unwieldy. Putting the roof on is the hard part.
Does It Kill Your Air Conditioner?
This is the question I hear most from other growers, so I asked directly.
Julia's answer, and this is the company's position: a standard window AC can be set to 60 degrees, and if you have ever stood in front of one at that setting you know it is pushing out air far colder than 60 to get there. The compressor only runs when the room sensor says you are above your target.
Because the walls are insulated well past what a house would be, R25 or better against maybe R10 to R15 in a typical home, the space holds the cold much longer. So the compressor cycles less often than it would in a house. Their framing is that they are not taxing the air conditioner, they are harnessing it.
She also said their testing shows roughly 40% better energy efficiency than a traditional compressor-style cooler. That is their figure, and I am passing it along as theirs rather than something I have measured myself.
What I can tell you is my own experience. I started this business in 2017 and bought the cooler around 2018 or 2019. We replaced the air conditioner about two years ago, not because it failed but because it had reached the point of needing a recharge and a deep clean, and we all looked at each other and decided to just put a new unit in. Disconnecting and reconnecting was straightforward.
It runs year-round. It is not something we turn off.
Six Years In
A few honest observations from living with it.
The walls are easy to clean. I do not deal with condensation problems. I wipe the gasket with a Clorox wipe occasionally and that is it. It does not mold and it does not smell, which matters because we are not tidy in there. Water gets spilled. Something is always happening.
It does not dent easily. It has absorbed years of carts, buckets, vases and elbows.

Our calendar goes up there, and every order ticket gets posted as it comes in. It genuinely looks like a pizza shop line.

We use every side except the back.
If You Are Weighing This Up
A few practical things worth knowing.
Grant funding is common. Julia said they regularly hear from people who have secured grants. Store It Cold does not maintain a grant database or administer anything, but they will absolutely provide a quote for a grant application and then pick things up when the funding comes through. State departments of agriculture and USDA programs are where I would start looking.
Mobile coolers exist. Some florists build them so they can bring flowers to wedding venues with no refrigeration on site. That had not occurred to me and it is a genuinely clever solution for anyone doing installs at barns and outdoor venues.
